Fall flavors are here! I love all things pumpkin, cinnamon, apple, pecan - the warm, rich flavors are some of my favorites! I recently came across an apple bread recipe and I ended up making it twice in less than a week's time. It is so scrumptious, especially for an Autumn morning alongside hot coffee or tea.
The original recipe called for a loaf pan but the second time I made it, I decided to try a bundt pan and I thought it turned out even better. However you try it, I know you will enjoy it!
Apple Bread - recipe by Sweet and Thymne
INGREDIENTS:
For the bread:
2 medium apples, chopped (peeled also if you like)
1/2 cup brown sugar
2 tsp cinnamon
1 tsp ginger
1 egg, room temperature
1/3 cup sugar
1/4 cup vegetable oil
1/4 cup sour cream, room temperature
2 tsp vanilla
1 cup flour
1 tsp baking soda
1/2 tsp salt
Optional (but recommended) glaze:
1 cup powdered sugar
3 tbsp milk
1 tsp vanilla
INSTRUCTIONS:
Preheat oven to 350 degrees. Prepare a loaf pan or bundt pan.
In a medium bowl, combine the apples, brown sugar, cinnamon and ginger until evenly coated.
In a separate large bowl, mix together the egg, sugar, vegetable oil, sour cream and vanilla until combined.
In a small bowl, whisk together the flour, baking soda and salt. Add to the large bowl of wet ingredients and use a large spoon or rubber spatula to mix just until combined.
Add 3/4 of the apple mixture to the bread mixture and mix just enough to combine. Pour into the prepared baking pan.
Add the remaining 1/4 apple mixture on top. Bake for 50 minutes or until golden brown or until a toothpick inserted into the middle comes out clean.
Once the bread is baked, prepare the glaze. Whisk the ingredients together and drizzle over the warm bread. I thought the recipe made more glaze than needed but I will let you be the judge!
