The cool weather calls for warm recipes, and nothing is sweeter and more satisfying than this homemade Apple Fritter Bread. Typically, Apple Fritters are made using hot oil in a pan or fryer, but using this method, you get the same great taste with less of the mess. Perfect when paired with a cup of hot tea or coffee in the morning. When we found a wild apple tree on our land in New Hampshire, I saved them just for this recipe!
Cinnamon-sugar mixture:
1/3 cup brown sugar
1 tsp cinnamon
Batter:
2/3 cup granulated sugar
1/2 cup butter, softened at room temperature
2 eggs, room temperature
1 and 1/2 tsp vanilla extract
1 and 1/2 cups all-purpose flour
2 tsp baking powder
1/2 cup milk
Apple mixture:
2 apples, peeled and chopped
1 tsp cinnamon
2 tbsp granulated sugar
2 tbsp melted butter
Glaze:
1 cup powdered sugar
1 to 2 tbsp milk
In a small bowl, mix together the brown sugar and the cinnamon. Set aside. In a medium bowl, whisk the butter and the sugar until light and fluffy. Add the eggs one at a time, mixing after each addition. Stir in the vanilla.
In a separate bowl, combine the flour and the baking powder. Add in the butter mixture, and slowly add the milk until smooth. Next, peel and chop the apples, placing them in a small bowl. Add in the cinnamon, melted butter and sugar, stirring it gently.
In the prepared loaf pan, pour half the batter mixture on the bottom. Next, add half the apple mixture and half of the cinnamon-sugar mixture on top and press down to settle the apples into the batter. Pour the remaining batter on top, followed by the remainder of the apples and the cinnamon-sugar, pressing lightly.
Place in the oven and bake at 350 degrees for about 50-60 minutes, using a toothpick to test the center for doneness. Allow to fully cool on a wire rack for up to 30 minutes.
To make the glaze, mix the powdered sugar with milk until the desired thickness. Drizzle over the bread, slice and serve warm!
This Apple Fritter Bread as such a big hit. My apple tree is done producing fruit for the year, but I'm definitely going to the store for more apples to make this again before the season is over!
