I am always searching the internet for new healthy recipes that are quick and easy — and this avocado and shrimp recipe is exactly that!
Avocado and Shrimp Salad only takes about 10 minutes to prepare and serves two people. I found a version of this recipe on Pinterest and I decided to tweak a few of the item portions, and then add new ingredients in to make it my own. It turned out absolutely delicious, so I thought I would share it with you all!
This recipe would be absolutely fantastic for the warmer months because it is so light and refreshing! Ever since trying this recipe, I have been completely hooked.
Ingredients
- 1/4 chopped red onion
- 1 tsp olive oil
- 1 1/2 limes, juice of (you can add more if you want)
- 1/4 tsp kosher salt
- black pepper to taste
- 1 lb cooked, peeled shrimp, chopped
- 2 medium avocados, diced
- 10 cherry tomatoes, chopped (you can personalize this to preference)
- 2 tbs chopped cilantro
- 1 jalepeno, seeds removed, diced fine *optional*
Directions
In a small bowl, combine the red onion, lime juice, olive oil, salt, and pepper. Let the onions soak for a minimum of 5 minutes to mellow out the onion flavor.
Peel and chop the shrimp. Add your shrimp, avocado, cilantro, and tomatoes to a bowl.
Pour the onions/lime juice on top of your ingredients and gently toss. Put this on a plate or bowl and you will be ready to go!
