Sure enough, spring has finally made an appearance, and I think she’s going to stick around this time! I live in the Midwest (northern Indiana, to be exact) and we have been blessed with temperatures in the 70s these past few days. I can’t get over how beautiful the weather is – I want to spend as much time as I can outside soaking up the sun!
My grandparents just gave my husband and me our first grill, and we are so excited to fire it up and have a few friends over for a barbeque here soon. My husband will more than likely take the lead on grilling the main course, so I’ve been making notes of some side dishes that would be perfect for a group gathering.
I came across this Avocado Humus recipe from Cooking Classy, and after the first few bites, I knew I had to share it with you! This dip is the perfect side staple for your next barbeque. It’s creamy, rich, and full of hearty avocado flavor. I paired it with classic pita chips, but there are a million ways you could dress this dish up. Add a sprinkle of red pepper flakes and cilantro, toss in a couple of diced tomatoes and red peppers, or swap the pita chips for tortilla chips – whatever suits your taste buds!
Avocado Hummus Recipe
Ingredients
1 15-oz. can chick peas
2 medium avocados
3 tbsp olive oil
2 tbsp lime juice
1 clove garlic
Salt and pepper to taste
Instructions
Drain the chick peas, and finely dice the garlic. Add both to a food processor along with the olive oil and lime juice. Pulse until smooth.
Peel, core, and dice the avocados. Add to the food processor along with a bit of salt and pepper. Pulse again until smooth.
Add a couple of toppings, if desired, and serve alongside a few crunchy chips or vegetables!
