Back to School Breakfast: Homemade Granola

It's back to school season! While I am sad to see summer go, I do love getting my family back into a regular routine. However, school mornings can easily become hectic. It seems like there are a million little things to do: from waking up sleepy kids, to getting dressed, to making breakfast, to double checking backpacks, to getting my kids to school before the first bell - all that and more within a one-hour window! If someone hasn't told you recently: mommas, you're amazing!

After hair has been combed, sneakers have put on the right feet, dishes put away and kids dropped off on time - I like to take a few minutes to myself before I begin my work day. Every morning includes a mocha and a hearty breakfast. While I love a good egg & avocado toast, I have recently become obsessed with granola. My aunt shared this homemade granola recipe with me, and I now make it once a week. It's amazing with fruit parfaits but lately I love it with a splash of milk and fresh fruit. 

INGREDIENTS:

2 cups of old fashioned oats 
1/3 cup of honey
1/3 cup of coconut oil
1/4 cup sliced almonds - *optional but highly encouraged!
2 tbsp brown sugar
1 tsp vanilla
1/2 tsp cinnamon
Pinch of salt

INSTRUCTIONS:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or nonstick spray. 

Combine all of the ingredients in a bowl. Mix until evenly combined. 

Spread out evenly on the baking sheet. Bake for 10 minutes. 

Mix and rotate granola and then return to the oven for another 8-10 minutes or until golden brown. 

Once cooked, remove from oven and allow to cool. 

Store leftovers in an air-tight container and enjoy!
