Baked Chicken Queso

If you're looking for a tasty side for a dinner party or a weekend snack with friends, this delicious baked chicken queso is perfect. It's cheesy with just enough spice. Bonus? It's ready in 30 minutes or less!

You probably already have these ingredients in your fridge and pantry right now:

1 cup of shredded chicken

1 cup shredded mild cheddar cheese (or pepper jack for an extra kick)

8 ounces of cubed Velveeta cheese

8 ounces of cream cheese

14 ounces diced tomatoes with chilis

1/2 cup heavy whipping cream

1 teaspoon dried oregano

1 teaspoon paprika

Sprinkle of salt and pepper

Preheat the oven to 375 degrees. Toss the shredded chicken with the salt, pepper, oregano and paprika. In an 8x8 baking dish, add in the newly seasoned chicken, the Velveeta cheese, shredded cheddar, cream cheese, and diced tomatoes. Gently pour the heavy whipping cream on top. Don't worry about mixing yet. Bake uncovered for 25-30 minutes, or until the cheese is melted. When it's ready, take it out and stir. 


You could transfer the chicken queso into a fancy porcelain bowl or just serve it warm right out of the pan. Garnish with scallions, bacon, or cilantro. Eat with tortilla chips as a dip or use the chicken queso as a great addition to taco night. The creamy, rich flavor will be a hit no matter what!
