Spring and summer generally put me in the mood for light, refreshing meals.
Usually followed by ice cream or something equally unhealthy. I won’t try to deny that I’m that person.
But I do love a good salad!
Taco salad has been my go-to for years, but this little twist has me making salad for lunch or dinner 3 to 4 times a week.
It’s SO good!
BBQ Chicken Salad
I’m a big BBQ fan, so combining my love of BBQ with a healthier option, like salad, makes me feel a little better about my food choices. BBQ Chicken Salad is easy to make and there are so many topping options!
Easy Pulled Chicken
It all starts in my pretty slow cooker! (You can find it here.)
I love making crockpot chicken early in the week so I can use it for several different meals and cut down on meal prep time. Just pour a cup of chicken broth (or water) into your crockpot, add about 2 lbs. of chicken breast, season with whatever you have (I use salt, pepper, garlic (fresh or powder), and onion powder), and cook on high for about 4-5 hours. Pull the chicken out of the broth, and it will practically shred itself! I store it in the fridge for about 4 days.
Once you have shredded chicken on hand, the salad comes together pretty quick!
Toppings
There are so many delicious topping ideas! Start with a big bowl of lettuce, heat and toss some pulled chicken in your favorite BBQ sauce (I use Sweet Baby Ray’s), then let the topping magic begin!

- Cheese
- Cilantro
- Onion
- Crispy Onions
- Crispy Jalapenos
Take your pick! Once you’ve loaded your salad up, drizzle with ranch dressing and BBQ sauce.
