This Blackberry salad is great for summer, but I absolutely love it for fall. It pairs nicely with many fall meals but with a bit of summer freshness from the fruit. It is so easy to make it; the key is the blackberry vinaigrette.
SALAD INGREDIENTS: 1 large (16oz) bag of Spring mix greens, 1 (12oz) box of fresh blackberries, 1 cup parmesan cheese (shaved with a potato peeler), 1 cup of thinly sliced red onion or shallots, drizzle of balsamic glaze, salt and pepper to taste.
DRESSING INGREDIENTS: 1/2 cup virgin olive oil, 1/3 cup blackberry vinegar, 3 tbsp lemon juice, 1 tbsp garlic paste, 12 tbsp balsamic glaze, salt and pepper to taste.
If you are unable to find this specific blackberry vinegar, no worries, make your own!
In a blender add 1/2 cup of fresh blackberries with 1/2 cup of balsamic vinegar and a pinch of salt. These ingredients will make it taste as good as the bottle!
You can top this salad with grilled chicken or steak to make it a meal or leave it as is for the perfect side salad. Hope you enjoy!
