Blueberry Banana Bread

I recently discovered that not everyone shares my extensive love for chocolate. In my mind, there is no greater indulgence; however, others feel different.

One of my most requested recipes is banana bread. I made this classic recipe a little bit sweeter by adding rich dark chocolate chips. It’s one of my favorite treats to date, however if you’re looking for a more natural sweetener, trade the chocolate chips in for fresh blueberries for a blueberry banana bread that’s bursting with fruity flavor!

Blueberry Banana Bread

YIELD: 1 LOAF

Ingredients

3 ripe bananas
1/3 cup melted butter
1 tsp baking soda
Pinch of salt
1 cup sugar
1 egg
1 tsp vanilla
1 & 1/2 cups all-purpose flour
3/4 cup fresh blueberries

Instructions

Preheat oven to 350°F.

In a large bowl, use a fork to mash the bananas until combined with minimal lumps.

Add in the melted butter. Stir in the baking soda and salt.

Next add in the sugar. Beat the egg in a separate bowl and then add it to the banana mixture followed by the vanilla.

Add the flour in batches and mix well until combined. Last but not least, fold in the blueberries.

Bake for one hour and 10 minutes or until a toothpick inserted into the center comes out clean.

Once baked, remove from the oven and allow the blueberry banana bread to cool in the pan for about 5 minutes. Carefully remove from the pan to finish cooling. Once cool, slice, serve, and enjoy!
