Buffalo Chicken Nachos

I recently found a recipe for baked nachos — and immediately questioned why I never make these for dinner. Maybe it’s the idea of serving chips and cheese to my family, but I knew there had to be a way to justify it. I went on a recipe hunt and found a few variations that sounded really good…especially these buffalo chicken nachos!

Serving a dinner like this occasionally not only simplifies the cooking time in the kitchen, but it also makes the cleanup easy too, which some weeknights require!

These Buffalo Chicken Nachos combined two of my favorite foods — buffalo chicken and nachos! And my boys were pretty excited to hear that we were having nachos for dinner so it was a win all around!

I made a few adjustments to the original recipe which I will list below but be sure to check out the link for variations on this simple recipe, too.

Buffalo Chicken Nachos

Buffalo Chicken Nachos

Adapted from The Girl Who Ate Everything 

8 cups tortilla chips
4 cups cooked chicken shredded
1 1/2 cups buffalo wing sauce
3 cups shredded monterey jack cheese
1/2 cup blue cheese crumbles
3 green onions, thinly sliced
Small handful of cilantro

Preheat oven to 475 degrees.

Put tortilla chips in a casserole dish.

Mix the wing sauce and cooked chicken. Spread the mixture over the  tortilla chips, mixing just slightly so the bottom chips get chicken too. Top with the cheese.

Bake in the top portion of the oven until cheese is melted for about 7 minutes. Once they are done top with the green onions, cilantro, and blue cheese.

If you have any extra buffalo sauce or ranch, these would be great condiments to serve alongside your dish
