Do you love homemade apple pies but wish the baking process was a little easier? I recently came across the perfect recipe for bite-size apple pies, and I just had to share it! I have made these cookies twice and they have been huge crowd pleasers; not a single cookie was left behind! Try these for your next Bible study, pitch-in, or even as a tasty addition to the Thanksgiving dessert table!
Caramel Apple Pie Cookies - recipe adapted from cookingmystory.com
Ingredients:
Dough:
2 & 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
3/4 cup sugar
1/4 cup brown sugar
1 egg
1 tsp vanilla
Apple topping:
3 medium apples, peeled and diced
1/4 cup sugar
1/4 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp cornstarch
Final topping: Caramel drizzle - I used store bought caramel spread that I warmed up
Instructions:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Wash, peel and dice the apples. Place in a small bowl and add all the remaining topping ingredients. Mix until combined and set aside.
For the dough, whisk together the flour, baking soda and salt together in a small bow.
In a separate medium bowl, beat together the butter and sugars until light and fluffy - about 3 minutes. Add the egg and vanilla and mix until combined. Slowly add in the flour mixture, mixing just until combined.
Form the dough into 2 tbsp balls. Press each ball into a disc, pushing up the edges to create a mini pie form to hold the apple filling. Once all of the cookies are formed, add approximately 1 tbsp of the apple pie filling to each one. Try not to add too much of the juices from the apple mixture.
Bake 12-15 minutes until the cookies are golden brown and just firm.
Allow to cool a little bit before adding the caramel drizzle. Serve and enjoy!
