Cinnamon Christmas Cookies

Something about the weather getting colder and Christmas drawing nearer makes me crave all things warm and cinnamon. We've made these cinnamon oatmeal date cookies for several years, and every time we make them for an event, people rave about them. The best part? These delicious treats are a healthier option for the holidays. Sweetened only with dates and made with high-quality ingredients, you'll be sneaking back to the kitchen for just one....or five...more. Enjoy!

Ingredients

  • 8 oz pitted dates
  • 4 oz butter 
  • 1 large egg
  • 2 tsp vanilla
  • 2/3 cup almond flour **
  • 1 cup gluten free oats
  • 1/2 tsp baking soda
  • 1 tsp cinnamon

Directions

Preheat oven to 350*. Add dates, softened butter, vanilla, and egg to a food processor. Blend until well mixed; add your flour, oats, baking soda, and cinnamon and pulse until the dough is mixed thoroughly. Scoop into balls and slightly flatten each on the cookie sheet. Bake for 15 minutes. 

Notes:

** You can use almond flour, regular flour, or paleo baking mix. We have used all three and these cookies always turn out good. Use the same amount of flour regardless of type. 

You can also customize this recipe by adding nuts, chocolate chips, or dried fruit.
