Coffee Cake

I have yet to conjure the strength to resist the sweet pastries that fill the displays at my favorite local coffee shop. They’re freshly baked, bundles of sweetness filled with berries, creams, chocolate, and more. While waiting in line, these scrumptious treats stare me down and before I know it my order consists of more than just coffee.

Or make it at home yourself! This recipe is sweet and simple. In under 30 minutes, you’ll have a batch of toasty cakes that are the perfect compliment to freshly brewed coffee.

COFFEE CAKE
YIELD: 12

INGREDIENTS:

Topping:

1/3 cup sugar
1/3 cup brown sugar
1 tsp cinnamon
Dash of salt
1 stick butter, melted
1 & 1/2 cups all-purpose flour

Cake:

1 & 1/2 cups all-purpose flour
1/2 cup brown sugar
2 tsp baking powder
1 tsp cinnamon
1/4 tsp baking soda
Dash of salt
3/4 cup milk
1/3 cup canola oil
2 eggs

Glaze:

1/4 cup powdered sugar
1 tsp milk

INSTRUCTIONS:

Preheat oven to 375°.

Combine the ingredients for the topping less the melted butter and flour.

Whisk in the melted butter. Stir in the flour and set aside.

In a separate bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt. Mix well until combined.

Whisk together the milk, oil, and eggs in a separate small bowl. Add the mixture to the dry ingredients and mix well.

Spread the batter evenly among a greased muffin pan. Sprinkle the crumb topping over the pan, and gently press into the batter.

Bake for 16 minutes or until a toothpick inserted into the center comes out clean.

While the cakes are cooling, whisk together the powdered sugar and milk with a fork to create the glaze. Drizzle over the cakes and enjoy!coffee cake 2
