Yet another way to enjoy coffee.
I think we all appreciate a caffeine kick every now and again. For me it being the end of the semester during my senior year of college – I could use it more than ever!
Now I would much rather go for something cool rather than a steaming hot cup of Joe on a day as beautiful as this one, though. This sweet recipe doesn’t require a machine, is super simple, and will give you the cool caffeine kick you need to power through the evening!
COFFEE ICE CREAM
2 cups heavy whipping cream
14 oz sweetened condensed milk
5 tsp instant coffee + 3 tsp warm water
2 tsp vanilla
In the bowl of a stand mixer, beat the heavy whipping cream until stiff peaks form.
Stir in the sweetened condensed milk.
Dissolve the coffee into the warm water and add to the cream and milk mixture.
Stir in the vanilla and mix well until combined.
Pour into a loaf pan and tightly seal with a lid or plastic wrap. Freeze for 6 hours or overnight.
Once set, scoop, serve, and enjoy!
