It’s almost Thanksgiving!

I have always loved Thanksgiving, but this year has been a little extra special to me: my oldest son just turned three and this year he is really starting to understand the meaning of Thanksgiving. It has been so fun to teach him about thankfulness and to hear him tell me he’s thankful for his Daddy!

Thanksgiving is an absolutely wonderful time all around, but can we be real for a minute? It is a lot of hard work. Once the dishes are washed Thursday night I don’t want to cook another meal for a century at least! So how can you make that happen? Well, I can’t promise you a century, but I do have some ideas of simple ways to use the leftover turkey a few times. And I’d bet even those who claim they don’t like leftovers would go for these.

Turkey Manhatten

I had to mention this classic meal. Turkey Manhatten was our household favorite when I was growing up and first choice for Thanksgiving leftovers. It’s a 5-minute meal: simply warm up turkey, mashed potatoes and gravy then pile them on top of a slice of bread or even leftover dinner rolls. This is comfort food, my friends — so good!

Turkey Noodle Soup

My mom reminded me that turkey can be used in place of chicken in practically any recipe. So why not Turkey Noodle Soup? This recipe from Ready Set Eat is the definition of simple. It utilizes leftover turkey and frozen veggies to keep the post-thanksgiving meal preparations to a minimum on time and effort.

Turkey Enchiladas

After a couple of days of turkey and stuffing we’re all usually ready for something different. Step out of the box and try this recipe for turkey enchildadas from Tiffany at Creme de la Crumb. It’s a great recipe to use your leftover turkey without it tasting like you’re using the leftover turkey.
