Easy Watermelon Sorbet

“Summertime & the living is easy!”

While summertime may be a bit more laid back and relaxed, it’s always nice to have a treat that beats the heat! I discovered this recipe on Pinterest last summer and we loved how quick, easy and healthy it was to make!

I adapted the original recipe from Dashing Dish, choosing to omit the added sweetener and using coconut water instead of regular water.

Easy Watermelon Sorbet

Ingredients

1/2 cup coconut water

Seedless watermelon, cut into chunks then frozen

1 1/4 cup Frozen strawberries

2 tbs Lemon juice (or according to taste)

Instructions

Place all of the ingredients in a blender or food processor, and blend until smooth. (This may take a few times of scraping down the sides of the blender, and possibly a few extra tbs of water.)

Enjoy sorbet immediately or place in a container and freeze until you are ready to serve. Remove from the freezer and let soften for about 5 minutes before enjoying.

Extra Tip:

We served it garnished with mint leaves and a sliced strawberry on top! Voila, summer dessert, easy breezy!
