The summer is not typically when we want hot pasta, but sometimes we crave a good comfort meal. This healthy pasta bowl includes lighter meats but bold flavors that will satisfy those taste buds. I started with this recipe here and modified it for dinner one night.
Ingredients:
Egg Noodles
Ground Turkey
Italian Chicken Sausage
Italian Seasoning
Diced Tomato
Bell Peppers
Olive Oil
Garlic
Instructions:
Heat up a large pan and add olive oil. Boil water in a medium saucepan in the meantime. Brown ground turkey and chopped chicken sausage in the pan, stirring occasionally. Add noodles in the saucepan and cook until done; don't overcook. Sprinkle Italian seasoning on the meat in the pan. Add garlic, diced tomato, and bell peppers. When the noodles are ready, scoop them out and add them to the meat and veggies in the pan. Add olive oil if the mix seems dry. Lower the temp and simmer for another 5-10 mins. Serve hot with a side salad and warm sliced Italian bread. Sprinkle with parmesan and enjoy!
