Homemade Peppermint Patties

Holiday baking brings me such joy!

I can think of nothing better than being crowded in a warm kitchen with loved ones, Christmas carols playing on the radio, sleeves rolled up to our elbows while we mix up sweet concoctions for friends and neighbors.

These decadent and bold peppermint patties are sure to put a spin on your traditional holiday baking! Refreshing peppermint is coated with a thick layer of rich, dark chocolate and sprinkled with bits of peppermint candy. You won’t find this flavor on the candy shelf!

Homemade peppermint patties are the perfect finale to any Christmas feast and they’re well suited for care packages for loved ones who can’t be near. Enjoy the flavors of the season!

Homemade Peppermint Patties

YIELD: 15

Ingredients

3 & 3/4 cups powdered sugar
3 oz evaporated milk
3 oz honey
3 tbs coconut oil
1 tsp peppermint extract
10 peppermint candies
8 oz bittersweet baking chocolate

Instructions

In a large bowl, top the powdered sugar with the evaporated milk, honey, coconut oil, and peppermint extract. Mix a few times with a large spoon and then attach to a mixer to finish combining.

Form the mixture into a smooth ball. Wrap with plastic wrap and let set in the refrigerator for 30 minutes.

Remove the mixture from the plastic wrap and place it between two pieces of wax or parchment paper. Roll 1/4 inch flat with a rolling pin. Use a small round cutter to form 15 patties. Place on a baking sheet lined with parchment paper and return to the refrigerator for another 30 minutes.

While the patties are chilling, place the peppermint candies in a plastic bag and crush with the rolling pin. Set aside.

Chop the baking chocolate and place it in a wide mouth bowl and heat in the microwave for 30 second intervals, stopping to stir, until melted and smooth.

Coat each patty in the melted chocolate and return to the baking sheet lined with parchment paper. Sprinkle with the crushed peppermint and allow to cool in the refrigerator until the chocolate is set. Once set, enjoy!
