Hosting a Soup Tasting Party

You know all of those fun party ideas you see on Pinterest? Like cake decorating, pot painting, bookmark making? Well, the ladies in my family have started meeting about once a month to actually host these parties! It's been so fun to do the Pinterest activities we've been dreaming of, and it's been a great way for all of us to stay connected despite our busy schedules. 

Since it's starting to finally feel like fall, we decided this month's activity would be a soup tasting party. Everyone brought a different soup and it was so fun, not to mention delicious! I hosted at my house and here are a few tips I would recommend for your soup party:

- communicate soup recipes ahead of time so you don't have any duplicates!
- find mini bowls to make serving easy
- use a tray or large plate to hold all the mini bowls
- have a variety of sides like crackers, corn chips, toasted bread
- don't forget the toppings! Sour cream, shredded cheese, cilantro - whatever your soup calls for
- if you have a large group, maybe assign some ladies to baking corn bread or bringing a charcuterie board so that you don't have too many soups

This was the perfect way to kick start soup season! I think it may just be a new family tradition; we had the best time. I hope you get to try this with your family and friends! 

If you need a good soup recipe, I tried this white chicken chili recipe and it was delicious. Just a hint of heat - we all enjoyed it! Plus, it was simple to make; you'll want to save it for a chilly fall day! 

Creamy White Chicken Chili - altered from Half Baked Harvest recipe

INGREDIENTS:
2 tbsp olive oil 
1 medium yellow onion diced
4 cloves of garlic minced
2 tsp cumin
1 tsp paprika
1/2 tsp chili powder
Salt & pepper to taste
1 tbsp boneless, skinless chicken breast
4 cups chicken broth
1/4 cup sour cream
4 oz green chiles
1 can white beans
1 can corn
1/2 cup salsa verde
1 cup shredded cheddar cheese
Optional toppings for serving: cilantro, shredded cheese, lime, avocado, corn chips 

INSTRUCTIONS: 

In a large pot over medium heat, heat the oil and add the diced onion. Cook about 5 minutes, stirring often. Add the garlic and seasonings and cook for another 5 minutes. 

Cut the chicken into strips and add to the soup pot along with the broth. Partially cover and allow to simmer 20 minutes, until the chicken is cooked through. Once the chicken is cooked through, remove to shred and return to the pot. 

Stir in the sour cream and mix well until combined. Add the green chiles, beans, corn, salsa verde and cheese. Mix well to combine and cook for another 5-10 minutes until the cheese is melted and everything is combined. 

Top with your preferred toppings and enjoy!
