Italian Turkey Meatloaf

Meatloaf is an American classic.

It might seem like a boring meal to some, but meatloaf has become one of my favorite weeknight meals.

I’m not a chef, so I cut myself some slack when it comes to making dinner for my family. I can’t make everything from scratch because I simply don’t have the time. If possible, I’d much rather spend my time reading books or playing ball with my boys than spending hours in the kitchen. 

Italian Turkey Meatloaf Recipe

For this recipe I knew I wanted to use an Italian seasoning packet for a kick of flavor. Then I decided to go a little unconventional and replace the usual call for bread crumbs with toasted bread instead. I also wanted to make this a turkey meatloaf since I rarely cook with beef and opt to use ground turkey since it’s leaner and a little more heart healthy.

I can’t lie, I was pretty proud of myself with how this recipe turned out.

Italian Turkey Meatloaf Recipe

Italian Turkey Meatloaf

Serves 2-3

Ingredients

1 lb Ground Turkey
1 Large Egg
1 Packet Dry Italian Seasoning
2 Slices of honey wheat bread, well toasted and crumbled

Instructions

Preheat oven to 350 degrees.

Mix all ingredients well and place into an oiled bread pan.

Cover loosely with foil and bake for 15 minutes then lower temperature to 325℉ and bake 30-40 minutes until juices run clear and golden.

Paired with long cut green beans and mashed potatoes this becomes a simple weeknight meal. Can you even eat meatloaf without mashed potatoes? It would be a crying shame! I didn’t do a ketchup topping with this meatloaf, but I’m sure it would be quite yummy. When I want a ketchup topping I simply do 1/4 cup ketchup and 1/4 cup brown sugar and bake on top for the last 10-15 minutes.
