A "berry" delicious summer treat
During the summer, my family and I eat tons of fruit. It's so refreshing and cool on those hot summer days! But there are days that I crave a hot sweet treat. I had some fruit that was soon to go bad, so I whipped up this satisfying berry cobbler that turned out SO GOOD! This recipe is easily adaptable for your dietary and taste preferences and would be a yummy addition to a July 4th barbecue. Enjoy!
Ingredients:
Filling:
2 cups fruit (I used fresh strawberries and blueberries)
2 TBSP butter
Topping:
1/3 cup salted butter, softened
3/4 cup coconut sugar
1 large egg
1 tsp vanilla
1/2 tsp baking soda
2 cups almond flour
1/2 - 1 cup white chocolate chips, optional (I use Lily's brand chocolate chips)
Instructions:
Melt 2 tablespoons of butter in a medium-size pot or skillet over low heat. Add your washed and cut fruit to the skillet. Heat until the fruit is soft and bubbly. Remove from heat and pour into a greased pie dish or 9 inch square baking dish. Preheat the oven to 350*F while you make the topping. In a large bowl, mix softened butter and coconut sugar until well-combined. Add in the egg and vanilla; mix again. Add in the baking soda and almond flour and mix until a thick batter forms. Spread the batter evenly over the fruit in the baking dish. Bake for 9 to 12 minutes or until the crust is golden. While the cobbler is still warm, serve with a scoop of dairy-free ice cream or top each serving with a few white chocolate chips.
