During the spring season, it is a time for rejuvenation, gardening, picnics and “spring cleaning.”
Also, it is a time to cook and bake those yummy, seasonal dishes and sweets. If there is one thing that I have a weakness for, it is satisfying my sweet tooth. There is a certain dessert that is baked every spring with a “from-the-heart” taste of citrus goodness that I look forward to: my nannies lemon meringue pie. Through the years of watching her delicate hands carefully mix the pie to perfection, I was able to learn the secrets of her recipe.
Lemon meringue pie is a must-have for any bright, spring day! It is also a great dessert to serve guests for any occasion with its sweet meringue topping and tart lemon filling. Anything with a lemony, citrus flavor is literally one of my most favorite desserts during this time of year.
Lemon Meringue Pie
Ingredients:
Pie Filling:
1 small package of Jell-o lemon pie filling (not instant)
1/2 cup sugar
1/4 cup water
3 egg yolks
11 ounce can of mandarin oranges
1 tablespoon lemon juice
1 cup Cool Whip
Meringue Topping:
4 or 5 egg whites, room temperature
Instructions
Add sugar, water, and egg yolk to pie filling in a pan. Mix well.
Pour juice of oranges into measuring cup. Add the lemon juice. Then add enough water to this to make 1-1/2 cups of liquid. Cook until thick and then cool.
Mix Cool Whip once filling is cooled.
Add 1/3 of orange sections inside of pie filling.
Pour filling into already baked crust.
Cover the top of pie with meringue topping.
