Loaded Baked Potato Casserole

Ingredients Needed:

- 2 cans of diced potatoes

- 1 cup of diced ham (I buy the precut pieces.)

- 1/2 cup of bacon bits

- 1 10.5-ounce can cream of chicken soup

- 8-ounce cup of sour cream

- 4 tablespoons of butter (melted)

- 1/3 cup of diced scallions

- two 1/2 cups of mild cheddar & Monterey jack shredded cheese

- 1/2 tsp of ground pepper

- 1/2 tsp of onion powder

- 1/2 tsp of garlic salt

Directions For Prep:

First, preheat your oven to 350 degrees.

Then, in a large mixing bowl, combine your sour cream, melted butter, cream of chicken, and spices. Whisk ingredients together. Then add in your diced potatoes, ham, scallions, 1/2 cup of shredded cheese, and bacon bits. Mix until all ingredients are incorporated well.

Next, evenly pour your mixture into a nonstick 9x9 casserole dish. Then sprinkle your remaining 1/2 cup of cheese over top and place it in the oven (uncovered) to bake for about 45 minutes.

Once the casserole is finished baking, let it sit for about 10 minutes, and then enjoy :)

This may not be the healthiest meal option (in the slightest), but it’s perfect for those days that you just feel like snuggling up with some warm comfort food. I mean, you just can’t go wrong with cheese and potatoes!
