It's blueberry season! My sister is working at a blueberry farm this summer and so the kids and I tagged along to pick our share. I've been wanting to make a fruit pie and fresh blueberries sounded so good! Rather than making one large pie, I decided to make mini galettes. They're smaller than a hand and the perfect size for a snack! You can even top them with vanilla ice cream - the perfect summer treat!
INGREDIENTS:
2 pie crusts - you can use storebought, but I use this simple dough recipe for all my pies
2 cups blueberries
1/3 cup sugar
2 tbsp cornstarch
1/2 tbsp lemon juice
1 egg + 1 tbsp water for egg wash
INSTRUCTIONS:
Preheat the oven to 375 degrees.
Combine the blueberries, sugar, cornstarch and lemon juice in a bowl. Set aside.
Roll out the dough and cut out as many 6-inch rounds as you can. Combine and reroll the scraps as needed. Place on a baking sheet lined with parchment paper.
Spoon 2-3 tbsp of blueberries in the center of each dough round. Fold the dough in to create edges. Galettes are meant to be rustic so these don't have to look perfect!
Whisk together the egg and water to create an egg wash. Brush along the crusts.
Sprinkle with sugar and bake until golden brown, about 25 minutes.
Allow to cool slightly. Enjoy as is or add vanilla ice cream for an extra treat!
