Peanut Butter Oatmeal Bars

What treats do you go for when you’re craving something sweet?

Do you stop by the local bakery and pick up a couple of freshly baked cupcakes or do you snatch a candy bar from the convenience store while you’re waiting in line to pay for gas? Both of these habits are unhealthy and expensive but they’re so easy to do when it’s the middle of the week and you’ve got a laundry list of items to accomplish before the day is over.

I understand this dilemma all too well. It can be difficult to maintain a healthy diet, budget, and schedule, but I’m here to help!

These rich, peanut butter oatmeal bars are sure to satisfy your sweet tooth and give you a boost of energy to finish the day strong. The creamy taste of peanut butter pairs perfectly with the wholesome oats to provide a well-balanced dessert that is guilt-free. Best of all, these delightful peanut butter oatmeal bars can be made in just thirty minutes!

Peanut Butter Oatmeal Bars

YIELD: 8 BARS

Ingredients

1 & 1/2 cups old fashioned oats
1/4 cup sugar
1/4 cup brown sugar
4 tbsp butter melted
3/4 cup milk
1/2 cup peanut butter
1 egg
1 tsp baking powder
1 tsp vanilla
1/2 tsp salt

Instructions

Preheat oven to 350°.

Spray an 8″x8″ pan with nonstick cooking spray.

Toss all of the ingredients into a large bowl and stir vigorously until combined.

Pour into the prepared pan and level with a large spoon.

Bake for 22-25 minutes or until golden brown and slightly firm to the touch.

Allow to cool in the pan. Once cool, slice into squares and enjoy these delicious peanut butter oatmeal bars!
