I have always been a cook who can never stick to the same recipe. No matter how old or authentic a household recipe is, I enjoy making it a few different ways. Pico de Gallo is one of those toppings that is extremely easy to make, which leaves room to get creative with it. Here is one way I like to prepare this incredible topping.
Ingredients:
1 1/2 cup grape tomatoes
1/4 of a red onion
1/3 cup cilantro
2 radishes
1 lime
Chili powder + salt
Cut the tomatoes into fourths. You can also use Roma tomatoes if you prefer, but these come in handy; they are easy to cut and very juicy.
Chop the onion and cilantro into small pieces and slice the radish into tiny strips.
Once everything is finely chopped, squeeze in the lime.
Sprinkle in 1 tsp of salt and 1/2 tbsp of chili powder. The tastiest salt for me is flake salt to sea salt; they have the most flavor. The chili powder is a substitute for a jalapeño pepper; I personally do not enjoy having chunks of pepper in my pico, and that's why I came up with this recipe. You are going to love the flavor that this powder brings out in this pico. It definitely makes it special.
Mix it all up and serve it. Don't forget to taste as you go to adjust the seasoning to your liking.
