Protein Breakfast Bowl

Ingredients Needed:

  • 1 cup frozen, diced sweet potato
  • 1/2 cup diced andouille sausage
  • 1 large egg
  • heaping handful of freshly chopped kale
  • 1/3 cup green diced bell pepper
  • 1/3 cup diced onion
  • freshly ground pepper
  • 1 tbsp ground flax
  • 1 tsp chia seeds
  • Everything But The Bagel seasoning (optional)
  • hot sauce (optional)

Directions:

First, brown your pieces of sausage in a medium-sized frying pan and set them to the side. 

Second, in the same pan, add your sweet potato, bell pepper, and onion. Once the ingredients are almost fully cooked, add in the sausage, kale, spices, and herbs. After the kale has cooked down, add all of the ingredients into a bowl and set it aside for serving.

In a separate frying pan, fry your egg and sprinkle some Everything But the Bagel seasoning on top. No worries if you don't have the seasoning; salt and pepper will work just fine!

Once your egg is done, it's ready to be placed on top of your kale, sausage, and sweet potato mixture for eating. I sprinkle (okay, maybe pour) hot sauce over mine, but you can obviously leave that step out.

No matter which way you choose to eat it, it's delicious and packed with protein to get you going. Enjoy! =)
