So, I am for sure and unashamedly that annoying girl who totally geeks out about all things fall-related, especially when it comes to pumpkin spice.
I’m also the mother of a toddler, so when I find a good recipe that requires minimal effort and only five minuets of my time, I feel the need to share. If you’re a PSL lover like me, who’s always on-the-go, and appreciates a good guilt-free breakfast, this one’s for you!
Ingredients Needed:
- 1/4 cup of pumpkin puree
- 1/2 cup of old fashioned oats
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 tsp of pure coffee extract (I use and recommend the Watkins brand)
- 1/2 cup of unsweetened almond milk
- 2 tbsp of pure maple syrup
- 1/4 cup of plain, Greek yogurt
- 2 tsp of chia seeds
- 1/4 cup of granola (I use and recommend Purely Elizabeth superfood granola)
Directions:
In a mixing bowl, combine your yogurt, milk, pumpkin puree, maple syrup, and coffee extract. Stir until all of the ingredients are integrated, and then add your oats, chia seeds, nutmeg, and cinnamon. After you’ve mixed in your dry ingredients, pour the mixture into a sealable container (I use a mason jar) and place it in the refrigerator to chill overnight.
Serving Prep:
Whether you’re transferring your oats into a bowl to enjoy at home or eating them on the go in their container—top them off with a granola of your choice, drizzle a little maple syrup over the top, and voila! Just as easy as they are delicious! ?
