Recipe: Homemade Cherry Crisp

A romantic evening doesn’t require reservations and overpriced entrées.

When was the last time you stayed in for date night? A special and intimate evening can be created right at home. Find a sitter for the kids for a few hours, replace the clutter on the dining room table with a linen tablecloth and a pair of candlesticks and create a menu with a salad, main course, and finish the evening with a little something sweet.

This scrumptious cherry crisp can be easily tossed together and forgotten in the oven while the rest of dinner is prepared. The result is a skillet oozing with fresh cherries and warm bits of oats. Finish it off with a scoop of vanilla ice cream, grab a couple of spoons, and share this simple and sweet treat with your someone special.

CHERRY CRISP

YIELD: 3 SERVINGS

INGREDIENTS

1 & 1/2 cup fresh cherries
1/2 cup sugar
1/4 cup all-purpose flour
1/4 cup oats
1/4 tsp cinnamon
Pinch of salt
3 tbsp butter

INSTRUCTIONS

Preheat oven to 350°.

Wash and pit the cherries. Add the cherries and 1/4 cup of the sugar in a small bowl and toss until coated evenly.

In a separate bowl, combine the flour, remaining sugar, oats, cinnamon and salt.

Chop the butter and use your fingers to “rub” it into the flour mixture until combined.

Sprinkle half of the crumb mixture into the bottom of a small iron skillet. Top with the cherry mixture and then the remaining crumb mixture.

Bake for 30 minutes or until golden brown.

Allow to cool slightly. Top with vanilla ice cream and enjoy!
