We are big fans of pasta in our house.
I love how there are endless possibilities with the meat, sauce, and and noodle combinations. It lets me get creative while I cook and my family is always happy with the results. Pasta also makes plenty to feed a family with great leftovers for the next day, so that makes it a budget-friendly meal for me.
Find a new recipe for pasta and then get creative with it — change the noodle, meat or vegetable it suggests and enjoy your meal!
Sausage and Kale Pasta
2 cups sausage (precooked), sliced
2 cloves of garlic, minced
1 red bell pepper, diced
2 generous handfuls of kale, washed and torn into bite size pieces
1 lemon, juice and zest
Salt, to taste
1 package penne noodles
Lemon olive oil, for garnish, optional
Boil pasta according to package instructions.
Meanwhile, heat olive oil in pan over medium heat.
Add the precooked sausage to heat through and to get crispy. Add the garlic and red bell pepper, stirring often until bell pepper has softened.
Remove the pan from the heat and stir the kale until it wilts. Add in the lemon juice and zest, taste and add salt as needed.
Serve the sausage mixture over the penne noodles and if you have the lemon olive oil, drizzle it over each bowl.
