Scrumptious Coffee Cake

I love having a pastry with my cup of coffee. Whether it be a scone, muffin, or coffee cake, I just love a little extra something sweet! This coffee cake is the perfect treat! It's easy to whip up and it goes a long way; it's great for entertaining. 

I put my kids down for a nap on a Saturday afternoon, made myself a homemade mocha and thought to myself, something is missing...and then I came across this recipe on Pinterest! I love easy recipes that require simple ingredients that you already have on hand. This is going to be one of my go-to's throughout the fall and winter months! 

Cinnamon Coffee Cake - recipe from Go Go Go Gourmet
Ingredients: 

Cake:
1 stick of butter, softened
3/4 cup sugar
1 tsp vanilla
1 egg
2 cups flour
2 tsp baking powder
Pinch of salt
3/4 cup of milk

Filling: 
3 tbsp butter, softened
1 tbsp cinnamon
1/2 cup flour
1/2 cup brown sugar

Topping:
5 tbsp butter, softened
3/4 cup flour
1/2 cup brown sugar
1 tbsp cinnamon 

Instructions:

Preheat oven to 350 degrees. Line the bottom of a 9X9 square pan with parchment paper and spray with nonstick cooking spray. Set aside.

To make the crumb topping, combine all of the ingredients required in a small bowl with a fork. The crumbs should be pea sized. Place the mixture in the fridge until you're ready for it.

Use a mixer to cream together the butter and sugar required for the cake batter. Mix in the vanilla and egg. 

In a separate bowl, combine the flour, baking powder and salt. Add half of the dry ingredient mixture to the batter and mix just until combined. Add in the milk and mix until combined. And, lastly, add in the second half of the dry ingredient mixture. Mix just until combined, be careful not to overmix. 

In a separate small bowl, combine the butter, flour, sugar and cinnamon required for the filling. 

Spread half of the cake batter into the bottom of your cake pan. Spread the filling mixture evenly on top, followed by the remaining half of the batter. Smooth the surface with a spoon. Sprinkle the crumb topping evenly on top and bake for 45 minutes or until golden brown and a toothpick, inserted into the center, comes out clean. 

Best served warm with a cup of coffee, of course!
