I’m a girl that likes variety and enjoys trying new recipes, but there are a few recipes I’ve discovered or invented over my almost-six years of being married that have become go-to favorites for my husband and me. One of these favorites (probably in our top three favorite meals!) is Oven Fried Chicken Tenders. I first started making an Amish-style Oven Fried Chicken recipe (which we still LOVE), but recently, I decided to try something new. I took the bones of that tried-and-true recipe and added Italian flavors to give the meal a different twist. And, oh goodness, are these tenders good!
If you’re looking for an easy weeknight meal for your busy summer schedule and one the whole family will love, I seriously can’t recommend this recipe enough. It takes a little while to bake but is otherwise super easy, and pretty much all of the ingredients, aside from the chicken, are things most people already have in their fridge/pantry, so it’s cheap too!
Ingredients:
- 1 large pack of raw chicken tenders (usually about a dozen in each pack)
- ⅓ cup of vegetable or canola oil
- 1 stick of butter
- 1 ½ cups of all-purpose flour
- 1 tsp of salt
- 2 tps of black pepper
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp of cayenne pepper
- 2 tsp Italian seasoning
- ¼ cup grated parmesan
Instructions:
- Preheat oven to 375 degrees Fahrenheit.
- Place oil and butter in a sheet pan and place in preheated oven to melt the butter. Make sure to remove the pan as soon as the butter melts so it doesn’t burn!
- In a large sack or covered bowl, combine the flour, seasonings, and cheese.
- Roll the chicken tenders in the oil/butter mixture and then place 2-3 tenders in the flour mixture at a time and shake well to coat them. As you coat the tenders, return them to the sheet pan, keeping the excess butter/oil in the pan.
- Bake at 375 for 45 minutes. **I will often add a couple pats of extra butter amongst the tenders to make sure they all have plenty of butter to bake in, especially if my pan isn’t perfectly level and all the liquid wants to run to one side.**
- Serve with a couple of your favorite sides; some of our go-to pairings are air-fried french fries, fried okra, green beans, or lima beans.
