Summer is almost upon us (at least in the South!), and ice cream season is in full swing. If you've read any of my recipe blog posts, then you know I'm a self-proclaimed health nut. I'm all for wholesome, nutritious meals, including sweet treats! When the weather starts turning warm, my family starts craving cool desserts. My husband started whipping up this homemade sorbet last week, and it's quickly become a family favorite. My ice-cream-loving boys are even won over by this sweet, refreshing, and healthy dessert. This recipe is simple to make and doesn't require a bunch of ingredients. All you'll need is a blender. We use a Ninja blender, but a regular blender will work fine. Enjoy!
Ingredients:
1/2 cup frozen strawberries (organic if possible)
1/4 cup frozen pineapple
4 ounces organic pineapple juice (We love the Knudsen's brand!)
1 TBSP honey (more if you like a sweeter sorbet)
Instructions:
Add all the ingredients to the blender. For our blender, we add the frozen fruit first then add in the liquid and honey. It just seems to work best for ours but might be different for another blender. Blend until smooth. If needed, add more liquid for a thinner consistency; add more frozen fruit for a thicker, sorbet-like consistency. Top with coconut flakes or chopped nuts if desired. You can also make a big batch and store in the freezer. The perfect summer treat!
