Our family loves to eat fruit, and with the summer season in full swing, we have been plowing through WATERMELONS! I’ve been making a super easy fruit dip to have at the ready in my fridge for my family to use daily as a little extra treat with their fruit. In my opinion, blackberries, apples, and watermelon are incredibly delicious and refreshing paired with this dip! If you are on a low carb diet, this is easily adaptable to fit your needs! I hope your family enjoys this dip this summer as much as we are!
Ingredients:
1- 8oz. package of cream cheese
1/2 teaspoon lemon juice
1 teaspoon vanilla extract
1/2- 1 cup powdered sugar (depending on how sweet you want it) (You could also substitute in Powdered Monkfruit Sweetener- like the Lakanto and Swerve brand)
Topping: just have fun and sprinkle on top. There are low carb options for all of these!
-Granola (optional) *my favorite
-Cinnamon (optional)
-Coconut flakes or shredded coconut (optional)
-Nuts (optional)
-Chocolate chips or flakes (optional)
-Maple Syrup (optional)
-Chocolate Syrup (optional)
-Sprinkles (optional) *kid favorite
-ANY OTHER IDEA YOU HAVE!
Instructions:
1. Beat or whisk the softened or unsoftened cream cheese in a mixing bowl until it’s smooth
and creamy.
2. Add in the powdered sugar of your choice and whisk well.
3. Pour in the vanilla extract and whisk together.
4. Finally, add in the lemon juice and whisk well.
5. Serve immediately or keep in the refrigerator until ready to serve.
Note: I would double this recipe if you are making it for more than 2 people. If you are wanting it to last throughout the week, you can triple it or more!
