The Perfect Spring Appetizer: Broccoli Salad

My Mawmaw has been making her “famous” broccoli salad for decades, and it is a MUST-HAVE at our family Easter Sunday lunch every year—and really every family holiday meal. It’s such a fitting dish for springtime with its bright colors and light, fresh ingredients, and it is so easy to make, as well! The dressing is what truly makes this dish shine. When I first helped my Mawmaw make it, I was surprised by the dressing ingredients because you would not think they would taste good together—but trust me, when the dressing and the salad are all mixed together, it’s like eating candy (but healthy)!

Broccoli Salad

**Yields 5-6 cups**

- 1-2 lbs of raw broccoli heads or crowns chopped into small pieces

- 1 medium purple onion, diced small

- 1 cup crispy bacon pieces

- 1 cup shredded cheddar cheese

DRESSING
- 1 cup mayonnaise 

- 1/2 cup sugar

- 2 tbsp apple cider vinegar 

- salt and pepper to taste


Mix salad ingredients with dressing and serve immediately. Enjoy!
