Add remaining flour mixture and applesauce, beating well after each section. Stir in walnuts and butterscotch chips. Spoon batter evenly into prepared muffin cups.
Check cupcake for a golden finish by inserting toothpick in middle. Next, let pan cool for 10 minutes before removing to wire rack; cool completely.
In the meantime, prepare the butterscotch pudding. After cupcakes have cooled, fill center with butterscotch filling.
Add various toppings like walnuts, pretzels, carmel drizzle, chocolate coffee beans, peanut butter balls, or candy corn. Remember to have fun and be creative with your desired topping!
