Traditional foods are comforting, especially when they can be enjoyed at a specific time of year that is nostalgic.
I like to add my own twist to recipes too, though. I enjoy the suspense of wondering if my alterations will be a delicious discovery or a dreadful disaster. More often than not, they are delicious! There are some recipes that need a little tweaking; others are delightful as is. Simple can be sweet and this recipe proves just that!
Traditional Pumpkin Bread
2 loaves
Ingredients
1 cup vegetable oil
2 cups sugar
3 eggs
2 tsp vanilla
2 cups pumpkin puree
3 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
Powdered sugar to dust
Instructions
Preheat the oven to 325℉.
In large bowl, combine the vegetable oil, sugar, eggs, vanilla, and pumpkin puree.
In a separate large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Add the wet ingredients to the dry ingredients in batches. Mix well until combined.
Pour the batter into two greased loaf pans and bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and allow the loaves to cool in the pans for 5 minutes. Carefully remove from the pans to finish cooling.
Sprinkle with powdered sugar, slice, and enjoy!
