Valentine's Chocolate Chip Cookie Cakes

If you're looking for an easy homemade dessert to make for Valentine's Day--either for a special dinner at home, as a project with your kids, or to give as a gift--I've got just the thing! Our church's youth department bakes homemade chocolate chip cookie cakes pretty much every year as a Valentine's Day fundraiser, and they always sell so well! It's usually our biggest fundraiser of the year. We used a new recipe last year, and it was definitely the best yet. So, so delicious and super easy to make as well! The recipe makes two 12" cookie cakes, so you can easily make one to keep and another to give away to a loved one. 

Ingredients:

- 1/4 cup of white sugar

- 1 cup of butter (not margarine!)

- 1 cup of brown sugar

- 1 teaspoon of baking soda

- 1 teaspoon of vanilla

- 1 small box of vanilla pudding mix

- 2 eggs

- 2 cups of chocolate chips

- 2 1/4 cups of flour


Instructions:

- Cream softened butter, white sugar, brown sugar, and vanilla together with a mixer. Add eggs and mix well.

- In a separate bowl, stir flour, pudding mix, and baking soda. Add to the butter mixture and mix well. 

- Add in chocolate chips and mix on low until just incorporated.

- Line 2 12" pans (heart-shaped pans, if you're making these for Valentine's Day!) with parchment paper. Divide dough in half and press each half evenly into a pan. 

- Bake at 350 for 8-10 minutes.

- Once the cookie has cooled down some, carefully flip the cookie out onto a platter or paper lining that you can slide into a pizza box. To do this without messing up the cookie, we recommend placing a sheet pan on top of the cookie, flipping it out onto that, and removing the parchment liner from the bottom of the cookie. Then you can place another sheet pan, covered in your paper lining, onto the back side of the cookie and flip the cookie over to be right side up on that pan.

- Let the cookie cool completely and then decorate with your choice of icing, if desired.
