Ultimate Grilled Cheese (The Perfect Pairing for Any Soup!)

Though it won't "officially" be fall for a couple more weeks, it's already fall in my book! Which means it's also "soup season"--though, let's face it, I can eat soup any time of year! 

If you're looking for an easy accompaniment for your favorite soup recipe, or simply want a quick lunch option the family will love, I've got the perfect thing! You can't go wrong with a classic grilled cheese, right? But why not take the beloved, all-American staple up a notch? This "Ultimate Grilled Cheese" recipe is something my family has made for years, and it is SO GOOD, y'all! Ingredients

- 3 ounces of cream cheese, softened

- 3/4 cup of mayonnaise 

- 1 cup of shredded mozzarella cheese

- 1 cup of shredded cheddar cheese

- 1/2 teaspoon of garlic powder

- 1/8 teaspoon of seasoned salt

- 10 slices of Italian bread (1/2 in. thick, preferably)

- 2 tablespoons of butter, softened

Instructions

- In a large bowl, beat cream cheese and mayonnaise until smooth. Stir in the cheese, garlic powder, and seasoned salt. 

- Butter the bread slices, on the side that will be outside the sandwich. Spread 5 slices of buttered bread with the cheese mixture, about 1/3 cup on each. Top each with the remaining bread. 

- In a skillet over medium heat, toast the sandwiches for 4-5 minutes on each side, or until the bread is lightly browned and cheese is melted. (You could also cook the sandwiches in an air fryer, for about the same time as it takes in the skillet. Just be sure to place a toothpick in the sandwiches to keep the top layer of bread from blowing off inside the fryer.)
