Fall is in the air! The temperatures are starting to cool down and, as much as I love summer, I am looking forward to bringing out my boot and sweater collection. Fall is such a fun season! There are so many sights and activities to enjoy; it’s truly special.
No matter what season it is, I love cooking and baking. I have several fall inspired recipes I’m excited to revisit and new ones to try. This started as a general fall food list until a clear theme made itself known: pumpkin. Pumpkin is practically the official flavor of the season, and I thought it would be fun to compile some of my favorite pumpkin recipes. These recipes have been shared by me and our She’s Intentional team over the years. At the end of the list is a recipe I haven’t shared on the blog just yet. It's quickly become a family favorite even for my kids who don't love pumpkin as much as I do!

#3 - Pumpkin Bread Two Ways | This is my go-to pumpkin recipe, I make it every season, multiple times for my family and church fundraiser and functions. It never fails to be a crowd pleaser!
#4 - Pumpkin Doughnuts | I'm not a doughnut girl but there's something about homemade doughnuts that get me. These scrumptious doughnuts will be gone in an instant on a chilly fall morning.

#6 - Pumpkin Spice Latte Overnight Oats | I distinctly remember when this post was first published by a fellow blogger; I immediately had to try it and it turned out amazing! The perfect match for your pumpkin spice latte.
#7 - Pumpkin Cake with Cream Cheese Frosting | Warm pumpkin cake with cream cheese frosting is a match made in heaven! Such a delicious recipe for hosting a fall dinner party.
#8 - Pumpkin Chocolate Chip Scones | I adore scones! They're not too sweet; they're just right with a cup of tea. I can't wait to try this recipe by our friend Brittany - I know she knows what she's doing in the kitchen!

PUMPKIN CHOCOLATE CHIP COOKIES - recipe adapted from All Recipes
INGREDIENTS:
1 & 1/2 cup pumpkin puree
1 cup sugar
1/2 cup vegetable oil
1 large egg
1 tsp baking soda
1 tsp milk
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
2 cups chocolate chips (I like to use dark chocolate)
1 tbsp vanilla
INSTRUCTIONS:
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or grease.
In a large bowl, combine the pumpkin, sugar, oil and egg and mix until combined. In a small bowl, combine the milk and baking soda before adding to the pumpkin mixture.
In a separate bowl, combine the flour, baking powder, cinnamon and salt and whisk until combined. Slowly add the dry ingredients to the wet ingredients and mix until combined. Add in the chocolate chips and vanilla and mix just until combined.
Use an ice cream scoop or a large spoon to spoon large cookies onto the baking sheet. Leave a minimum of 2-3 inches in between. Bake for 12-16 minutes or until lightly golden and just firm to the touch; check them as needed.
