Blueberry Oatmeal Bars
Yield: 8 servings
Ingredients
Crust & topping:
1 stick butter melted
3/4 cup old fashioned oats
1/2 cup sugar
1/4 cup light brown sugar
Pinch of salt
Filling:
12 oz frozen blueberries
1/3 cup sugar
2 tsp cornstarch
1 tsp lemon juice
Instructions
Preheat oven to 350℉.
In a medium bowl, combine the melted butter, oats, sugars, and salt. Use a large wooden spoon to mix until combined; the mixture will be coarse.
Pour half of the mixture into a 8″X8″ baking pan lined with parchment paper. Press and smooth into the pan, forming a thin crust.
Mix together the filling ingredients and pour into the crust. Top with the remaining streusel topping.
Bake for 55 minutes or until the blueberries have softened and the crust is golden brown. Once baked remove from the oven and allow to cool for about 30 minutes.
Once cool, slice into squares, and enjoy!
